Chocolate Cupcakes with Cream Cheese Frosting

I was super busy last week, but refused to miss my chance to use the Halloween sprinkles that I bought at Target! I made these cupcakes to bring into work on Halloween and they were a huge hit. This is a simple recipe, but you can do a lot with it if you have some food dye and fun cupcake decorations!

Chocolate Cupcakes with Cream Cheese Frosting (recipe originally from The Gold Lining Girl)

1 c milk
2 tsp white vinegar
3/4 c butter, room temperature
1 1/2 c sugar
2 eggs
1 tsp vanilla
1 3/4 c flour
1/4 c cocoa
3/4 tsp baking soda

For the frosting:
8 oz. cream cheese, softened
3 3/4 c powdered sugar
1 tsp vanilla

1. Preheat oven to 350°. Fill muffin cups with liners.
2. In a small bowl, combine milk and vinegar. Set aside.
3. In a large bowl, cream butter and sugar until light and fluffy.
4. Add eggs. Beat until well combined. Mix in vanilla.
5. In a medium bowl, combine flour, cocoa and baking soda.
6. Add dry ingredients to wet, alternately with the milk mixture.
7. Fill muffin cups 2/3 full.
8. Bake for 18-20 minutes, until a toothpick inserted in the center of a few cupcakes comes out clean.
9. Cool completely.

For the frosting:
1. In a large bowl, combine cream cheese and powdered sugar. Beat until fluffy.
2. Mix in vanilla.
3. When cupcakes are cooled, frost and decorate as desired.

These came out great!  The cupcakes were moist and the cream cheese frosting was a good compliment to the sweetness of the cake. They were the perfect Halloween treat!

We Broke Girls love celebrating pretty much anything, so it should come as no surprise that most of us love Halloween! From costume changes to haunted houses, we all had a blast yesterday.

Pumpkin Fluff Dip

I had a pretty low-key Halloween. The original plan was that a friend and I were going to have a scary movie marathon. That then morphed into us going to Terror Behind the Walls (which was AWESOME! More on that later…) and then watching Trick ‘r Treat and eating snacks. Speaking of snacks…

My friend made a delicious pomegranate margarita concoction (tequila, pomegranate juice, sugar, lime juice and orange bitters) and I made pumpkin fluff dip and also had (store-bought) guacamole.

I liked the pumpkin fluff dip, but it was very sweet and one of those things that you can’t really eat a lot of. With that said, I would definitely recommend making it for a party or some large gathering of people, as the recipe makes a lot (like, a lot a lot).

Pumpkin Fluff Dip (recipe originally from allrecipes)

1 (16 oz.) container cool whip, thawed1 (5 oz.) package instant vanilla pudding mix
1 can pumpkin puree
1 tsp pumpkin pie spice

In a large bowl, mix together pudding mix, pumpkin and pumpkin pie spice. Fold in cool whip. Chill in refrigerator until ready to serve.

Serving suggestion: Dip goes well with gingersnaps, apple slices and graham crackers. I served gingersnaps with mine.

Grim Grinning Ghosts of My Childhood

When I was little, my favorite video was Disney Sing Along Songs (yes, we’re talking old-school VHS tape, people). I loved it so much that I would cry when the final song, When You Wish Upon a Star, came on, and make my parents rewind it so I could immediately watch it over again.

Not too long ago, my roommate and I got to talking about that video and realized it was a staple in both of our childhoods. So, naturally, we had to see if we could find it on the internet. Low and behold, Youtube had the video in its entirety. (I could have SWORN it went on for hours when I was younger, but it’s actually only about half an hour.. Ah, childhood memories.)

There was one song in the collection that I didn’t love, however. And it wasn’t just that the song wasn’t exactly my cup of tea- It downright terrified me. In fact, I thought it was SO scary that I would make my parents fast forward through it because watching it gave me nightmares. Seriously, this song was legit.

If you don’t have any idea what I’m talking about, let me give you a little background. The tape is chock full of different (sing along) songs and you watch as an unbelievably lucky group of kids run around Disneyland singing said songs and getting into trouble with the Disney characters. I’m not still bitter that I wasn’t part of this group, I swear…

The song that gave me nightmares is called Grim Grinning Ghosts and features all of the Disney villains that we know and love in the CREEPIEST setting ever – at Disneyland’s Haunted Mansion.

Tell me that isn’t the creepiest video you’ve ever seen! Ok, at least admit that 4 year old you would have been a little freaked out by it…
